🥬 Collard Greens with Smoked Turkey
📝 Ingredients:
2 lbs collard greens, washed and chopped
1 smoked turkey leg or wing
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes (optional)
1 tablespoon apple cider vinegar
👩🍳 Directions:
1️⃣ Sauté Aromatics: In a large pot, heat olive oil. Add onion and garlic, and sauté until softened.
2️⃣ Add Turkey and Broth: Place the smoked turkey in the pot. Pour in chicken broth and bring to a boil.
3️⃣ Simmer for Flavor: Reduce heat and simmer the turkey for 30-45 minutes to infuse the broth with flavor.
4️⃣ Add Greens: Stir in the collard greens, a few handfuls at a time. Cook down until all greens are in the pot.
5️⃣ Season and Simmer: Add salt, pepper, and red pepper flakes. Cover and simmer for 45 minutes to 1 hour until greens are tender.
6️⃣ Finish with Vinegar: Stir in apple cider vinegar just before serving for a tangy kick.
