Classic Homemade Strawberry Cake

Ingredients

For the Sponge Cake:

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour

For the Filling:

  • 2 cups fresh strawberries, sliced
  • 2 tablespoons strawberry jam (optional)

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Directions

1. Make the Sponge Cake

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch rectangular pan.

  3. Gently fold in sifted flour and baking powder.
  4. Add vanilla and optional milk, folding until just combined.
  5. Pour into pan and bake for 25–30 minutes. Let cool completely.

2. Prepare the Strawberries

  1. Mix sliced strawberries with sugar and set aside to macerate.

3. Whip the Cream

  1. In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.

4. Assemble the Cake

  1. Slice cooled sponge cake horizontally into two layers.
  2. Spread a layer of whipped cream on the bottom half.
  3. Add the strawberry mixture evenly.
  4. Top with the second sponge layer and cover the entire cake with whipped cream.
