Canning Strawberries
ingredients:
* 4 cups strawberries, washed and hulled ![]()
* 1/2 cup sugar (optional) ![]()
* 1/4 to 1/2 teaspoon citric acid (optional) ![]()
instructions:
1. Place washed and hulled strawberries in a large pot, sprinkle with sugar, and stir to mix ![]()

2. Cover and let sit for about 6 hours to macerate ![]()
3. Prepare a water bath canner and sterilize your jars ![]()
4. Add citric acid to the pot if using, bring the strawberries and juice to a simmer, and cook for 1 minute until heated through ![]()
5. Pack strawberries into jars and cover with the juice, leaving 1/2 inch headspace ![]()
6. Remove air bubbles, adjust headspace, and seal jars with 2-part lids ![]()
7. Process in a water bath canner for 10 minutes (pints) or 15 minutes (quarts), adjusting for altitude ![]()
