Marshmallow Whip Cheesecake Heaven

🧁 Ingredients:

For the Crust:

  • 1½ cups graham cracker crumbs (about 10–12 crackers)
  • ⅓ cup granulated sugar
  • ½ cup (1 stick) unsalted butter, melted

For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1 cup marshmallow fluff (also called marshmallow creme)
  • 1 cup heavy whipping cream (cold)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • Optional: pinch of salt to balance the sweetness

Topping Ideas:

  • Extra marshmallow fluff or whipped cream
  • Mini marshmallows
  • White chocolate shavings or chips
  • Fresh strawberries, raspberries, or cherries
  • Crushed graham crackers for garnish

🍰 Instructions

1. Make the Crust

  • In a medium bowl, combine:
    • Graham cracker crumbs
    • Granulated sugar
    • Melted butter
  • Stir until the texture resembles wet sand.
  • Press the mixture evenly into the bottom of a 9-inch pie pan or springform pan.
  • Chill in the fridge while you prepare the filling.

2. Whip the Cream

  • In a cold mixing bowl, use a hand mixer or stand mixer to beat the heavy whipping cream until soft peaks form.
  • Add in the powdered sugar and beat just until stiff peaks form.
  • Set aside.

3. Make the Marshmallow Cheesecake Filling

  • In another large bowl, beat together:
    • Cream cheese (make sure it’s soft)
    • Marshmallow fluff
    • Vanilla extract
    • Pinch of salt (optional)
  • Beat until smooth and creamy, with no lumps.
  • Gently fold in the whipped cream mixture using a spatula until fully incorporated and fluffy.

4. Assemble the Cheesecake

  • Spoon the marshmallow cheesecake mixture over the prepared crust.
  • Smooth the top with a spatula.
  • Cover and refrigerate for at least 4 hours (or overnight) until set.

5. Decorate & Serve

  • Top with any combination of:
    • Extra whipped cream or marshmallow fluff
    • Fresh berries
    • Mini marshmallows
    • White chocolate drizzle
    • Crushed graham crackers

Slice, serve, and watch it disappear!
