🍔 Grilled Mozzarella BBQ Chicken Sandwiches

🔥 Ingredients (Serves 4):

  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • Salt & pepper, to taste
  • 1 cup BBQ sauce (use your favorite brand or homemade)
  • 4 slices fresh mozzarella (or shredded mozzarella, ~1 cup)
  • 4 sandwich buns (brioche, kaiser, or ciabatta work well)
  • 1 red onion, thinly sliced (optional, for topping)
  • Pickles (optional)
  • Butter or olive oil, for grilling buns

Optional toppings:

  • Lettuce
  • Tomato slices
  • Caramelized onions
  • Jalapeños for spice
  • Coleslaw for crunch

🔪 Instructions:

1. Prep the Chicken

  • Season chicken breasts with salt and pepper.
  • Brush each side with a little BBQ sauce.
  • Preheat grill (or grill pan) to medium-high heat.

2. Grill the Chicken

  • Grill chicken for 5–6 minutes per side or until fully cooked (internal temp 165°F / 74°C).
  • During the last minute of grilling, brush again with BBQ sauce and place mozzarella on top to melt. Cover grill or use a lid if needed to help the cheese melt.

3. Toast the Buns

  • Lightly butter or oil the cut sides of the buns.
  • Grill them cut-side-down until golden and crisp (about 1–2 minutes).

4. Assemble the Sandwiches

  • Place the BBQ chicken with melted mozzarella on the bottom bun.
  • Add toppings (onion, pickles, etc.) if using.
  • Drizzle with a little extra BBQ sauce if desired.
  • Top with the other half of the bun.
