📝 Ingredients (Serves 6–8):

  • 3 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 2 cups shredded cheddar cheese (or Mexican blend), divided
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream (or Greek yogurt)
  • 1 can (10 oz) Rotel tomatoes with green chilies, drained
  • 1 tsp taco seasoning
  • 1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed
  • Optional: Chopped green onions, cilantro, or jalapeños for garnish

👨‍🍳 Instructions:

1. Preheat oven to 350°F (175°C). Grease a 9Ă—13-inch baking dish.

2. Mix the filling:

In a large bowl, combine:

  • Chicken
  • 1 ½ cups cheese
  • Cream of chicken soup
  • Sour cream
  • Rotel tomatoes
  • Taco seasoning

Mix until well combined.

3. Layer the casserole:

  • Sprinkle half of the crushed Doritos into the bottom of the baking dish.
  • Spoon the chicken mixture over the chips and spread evenly.
  • Top with remaining Doritos and ½ cup cheese.

4. Bake:

  • Bake uncovered for 25–30 minutes, until hot and bubbly.
  • Let cool for 5 minutes before serving.

🌶️ Optional Add-Ins:

  • Add black beans, corn, or diced bell pepper to the filling.
  • Use spicy Doritos for extra heat.
  • Top with avocado, sour cream, or salsa when serving.

  • Assemble ahead (without Doritos on top), cover, and refrigerate for up to 2 days.
  • Add crushed Doritos just before baking to keep them crunchy.
  • Freezes well for up to 2 months.
