📝 Ingredients (Serves 6–8):
- 3 cups cooked chicken, shredded (rotisserie chicken works great!)
- 2 cups shredded cheddar cheese (or Mexican blend), divided
- 1 can (10.5 oz)Â cream of chicken soup
- 1 cup sour cream (or Greek yogurt)
- 1 can (10 oz)Â Rotel tomatoes with green chilies, drained
- 1 tsp taco seasoning
- 1 bag (9.75 oz)Â Nacho Cheese Doritos, lightly crushed
- Optional: Chopped green onions, cilantro, or jalapeños for garnish
👨‍🍳 Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Mix the filling:
In a large bowl, combine:
- Chicken
- 1 ½ cups cheese
- Cream of chicken soup
- Sour cream
- Rotel tomatoes
- Taco seasoning
Mix until well combined.
3. Layer the casserole:
- Sprinkle half of the crushed Doritos into the bottom of the baking dish.
- Spoon the chicken mixture over the chips and spread evenly.
- Top with remaining Doritos and ½ cup cheese.
4. Bake:
- Bake uncovered for 25–30 minutes, until hot and bubbly.
- Let cool for 5 minutes before serving.
🌶️ Optional Add-Ins:
- Add black beans, corn, or diced bell pepper to the filling.
- Use spicy Doritos for extra heat.
- Top with avocado, sour cream, or salsa when serving.
