Humpty Dumpty Dip

Ingredients:

  • 12 hard-boiled eggs, peeled
  • 1 (8 oz) package cream cheese, softened
  • ½ cup mayonnaise
  • 2 tbsp yellow mustard
  • 1½ tbsp white vinegar
  • 1 tsp paprika, plus extra for garnish
  • 1 tsp salt
  • Pinch of black pepper
  • Pinch of cayenne pepper
  • 2 tsp chopped chives, divided
  • Pickles (optional, for garnish)
  • Crackers, pretzels, or veggie sticks (for serving)

Instructions:

  1. Prepare Eggs:
    • Place 6 whole hard-boiled eggs in a food processor.
    • Cut the remaining 6 eggs in half, remove the yolks, and add them to the food processor. Set the egg whites aside.
  2. Blend Mixture:
    • Add cream cheese, mayo, mustard, vinegar, paprika, salt, black pepper, cayenne pepper, and 1 tsp chives to the food processor.
    • Process at high speed until smooth and fully combined.
  3. Finish & Serve:
    • Finely chop the reserved egg whites and gently fold them into the blended mixture.
    • Transfer to a serving bowl and sprinkle with remaining chives and a dusting of paprika.
    • Garnish with pickles (if using).
    • Serve with crackers, pretzels, or fresh veggies.
