Humpty Dumpty Dip
Ingredients:
- 12 hard-boiled eggs, peeled
- 1 (8 oz) package cream cheese, softened
- ½ cup mayonnaise
- 2 tbsp yellow mustard
- 1½ tbsp white vinegar
- 1 tsp paprika, plus extra for garnish
- 1 tsp salt
- Pinch of black pepper
- Pinch of cayenne pepper
- 2 tsp chopped chives, divided
- Pickles (optional, for garnish)
- Crackers, pretzels, or veggie sticks (for serving)
Instructions:
- Prepare Eggs:
- Place 6 whole hard-boiled eggs in a food processor.
- Cut the remaining 6 eggs in half, remove the yolks, and add them to the food processor. Set the egg whites aside.
- Blend Mixture:
- Add cream cheese, mayo, mustard, vinegar, paprika, salt, black pepper, cayenne pepper, and 1 tsp chives to the food processor.
- Process at high speed until smooth and fully combined.
- Finish & Serve:
- Finely chop the reserved egg whites and gently fold them into the blended mixture.
- Transfer to a serving bowl and sprinkle with remaining chives and a dusting of paprika.
- Garnish with pickles (if using).
- Serve with crackers, pretzels, or fresh veggies.
