No-Bake Mud Pie
Ingredients
24 chocolate sandwich cookies (like Oreos)
¼ cup unsalted butter, melted
For the Filling:
¾ cup semisweet chocolate chips
2 tablespoons unsalted butter
2 cups vanilla ice cream, slightly softened
1 cup cold heavy cream
¼ cup powdered sugar
1 teaspoon vanilla extract
For the Topping:
1 ½ cups whipped topping (like Cool Whip) or freshly whipped cream
Chocolate shavings or curls (optional)
Crushed cookies or mini chocolate chips (optional)
Instructions
Make the Crust:
Crush Cookies: In a food processor, pulse cookies until fine crumbs form. Add melted butter and pulse until evenly combined.
Press into Pan: Transfer the mixture to a 9-inch pie dish and press firmly into the bottom and up the sides. Freeze for 15–20 minutes until set.
Prepare the Chocolate Layer:
Melt Chocolate: In a microwave-safe bowl, combine chocolate chips and 2 tablespoons butter. Microwave in 20-second intervals, stirring until smooth. Let cool slightly.
Add Ice Cream: Fold in the softened vanilla ice cream until evenly combined with the chocolate. Spread this layer over the chilled crust. Return to the freezer for 30 minutes.
Whip the Cream:
Make Whipped Cream: In a cold bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Layer Again: Spread the whipped cream over the frozen chocolate layer and smooth the top.
Add Final Topping:
Top & Chill: Add a final layer of whipped topping or more whipped cream. Sprinkle with chocolate shavings or crushed cookies if desired.
Freeze & Serve: Freeze for at least 2–3 hours, or until firm. Let sit at room temperature for 5–10 minutes before slicing.
