Classic New York Cheesecake Recipe

Ingredients

For the crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ⅓ cup melted butter

For the filling:

  • 4 packages (8 oz each) cream cheese, softened
  • 1 ¼ cups sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 large eggs

Instructions

  1. Prepare the crust:
    • Preheat your oven to 325°F (160°C).
    • In a bowl, mix graham cracker crumbs, sugar, and melted butter.
    • Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan.
    • Bake for 10 minutes, then let it cool while preparing the filling.
  2. Make the filling:
    • In a large bowl, beat the cream cheese and sugar until smooth and creamy.
    • Add the sour cream and vanilla extract, and mix until combined.
    • Add eggs one at a time, mixing on low speed until just combined (don’t overmix).
  3. Bake the cheesecake:
    • Pour the filling over the cooled crust and smooth the top.
    • Bake for 60-70 minutes, or until the edges are set and the center is slightly wobbly.
    • Turn off the oven, crack the door open slightly, and let the cheesecake cool inside for 1 hour.
  4. Chill and serve:
    • Remove from the oven and cool completely at room temperature.
    • Refrigerate for at least 4 hours or overnight before serving.
