Avocado Mayonnaise Recipe

Ingredients:

  • 1 ripe avocado
  • 1/2 cup olive oil (or avocado oil for a more neutral flavor)
  • 1 tablespoon lemon juice or vinegar (to add tang)
  • 1 teaspoon Dijon mustard (optional, for extra flavor)
  • 1 small garlic clove (optional, minced for a garlicky kick)
  • Salt and pepper to taste

Instructions:

  1. Prepare the avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
  2. Add the liquids: Add the olive oil (or avocado oil), lemon juice (or vinegar), Dijon mustard, and garlic (if using) to the blender or food processor.
  3. Blend until smooth: Blend the mixture until smooth and creamy. You may need to scrape down the sides of the blender to make sure everything is fully combined.
  4. Season: Add salt and pepper to taste, and blend again.
  5. Adjust consistency: If it’s too thick, you can add a little bit of water or extra lemon juice to thin it out to your desired consistency.
  6. Chill: Refrigerate for at least 30 minutes to let the flavors meld together. You can store it in an airtight container in the fridge for up to 1 week.
