Ingredients
For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ⅓ cup melted butter
For the filling:
- 4 packages (8 oz each) cream cheese, softened
- 1 ¼ cups sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 4 large eggs
Instructions
- Prepare the crust:
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan.
- Bake for 10 minutes, then let it cool while preparing the filling.
- Make the filling:
- In a large bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the sour cream and vanilla extract, and mix until combined.
- Add eggs one at a time, mixing on low speed until just combined (don’t overmix).
- Bake the cheesecake:
- Pour the filling over the cooled crust and smooth the top.
- Bake for 60-70 minutes, or until the edges are set and the center is slightly wobbly.
- Turn off the oven, crack the door open slightly, and let the cheesecake cool inside for 1 hour.
- Chill and serve:
- Remove from the oven and cool completely at room temperature.
- Refrigerate for at least 4 hours or overnight before serving.
