Crockpot Steak Bites

Ingredients:

  • 1 1/2 to 2 lbs beef stew meat or sirloin steak, cut into bite-sized cubes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil (optional, for searing)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary (optional)
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Salt, to taste
  • 1 tbsp cornstarch (optional, for thickening the sauce)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Steak Bites:
    • If you’d like to add extra flavor, heat the olive oil in a large skillet over medium-high heat. Sear the steak cubes for 1-2 minutes on each side until they’re browned. This step is optional but adds more depth to the flavor.
  2. Transfer to the Crockpot:
    • Transfer the seared steak cubes (or raw, if you skipped the searing) to the Crockpot.
    • Add the diced onion, minced garlic, beef broth, soy sauce, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.
  3. Cook:
    • Stir everything together to coat the steak evenly in the seasoning and liquids.
    • Cover the Crockpot and cook on low for 4-6 hours, or on high for 2-3 hours, until the steak bites are tender and the flavors have melded together.
  4. Optional Thickening:
    • If you’d like a thicker sauce, mix the cornstarch with a little bit of cold water to create a slurry (about 1 tbsp cornstarch to 2 tbsp water).
    • Stir the slurry into the Crockpot 30 minutes before the cooking time is finished, then let it cook uncovered for the last 30 minutes to thicken the sauce.
  5. Serve:
    • Once the steak bites are cooked and the sauce has thickened (if using cornstarch), remove the Crockpot from the heat. Sprinkle with fresh chopped parsley for garnish, if desired.
    • Serve your steak bites over mashed potatoes, rice, or pasta for a complete meal. Alternatively, they are also great as a finger food appetizer!

Tips:

  • You can swap the beef broth for red wine for an even richer flavor.
  • Add some vegetables like bell peppers, carrots, or mushrooms to the Crockpot for a more complete meal.
  • If you want a spicier version, you can add a pinch of red pepper flakes or cayenne pepper to the seasoning mix.
