🍔 Grilled Mozzarella BBQ Chicken Sandwiches
🔥 Ingredients (Serves 4):
- 4 boneless, skinless chicken breasts (pounded to even thickness)
- Salt & pepper, to taste
- 1 cup BBQ sauce (use your favorite brand or homemade)
- 4 slices fresh mozzarella (or shredded mozzarella, ~1 cup)
- 4 sandwich buns (brioche, kaiser, or ciabatta work well)
- 1 red onion, thinly sliced (optional, for topping)
- Pickles (optional)
- Butter or olive oil, for grilling buns
Optional toppings:
- Lettuce
- Tomato slices
- Caramelized onions
- Jalapeños for spice
- Coleslaw for crunch
🔪 Instructions:
1. Prep the Chicken
- Season chicken breasts with salt and pepper.
- Brush each side with a little BBQ sauce.
- Preheat grill (or grill pan) to medium-high heat.
2. Grill the Chicken
- Grill chicken for 5–6 minutes per side or until fully cooked (internal temp 165°F / 74°C).
- During the last minute of grilling, brush again with BBQ sauce and place mozzarella on top to melt. Cover grill or use a lid if needed to help the cheese melt.
3. Toast the Buns
- Lightly butter or oil the cut sides of the buns.
- Grill them cut-side-down until golden and crisp (about 1–2 minutes).
4. Assemble the Sandwiches
- Place the BBQ chicken with melted mozzarella on the bottom bun.
- Add toppings (onion, pickles, etc.) if using.
- Drizzle with a little extra BBQ sauce if desired.
- Top with the other half of the bun.
